Bikini Recipe
Makes enough for 10 servings
For the Citrus Syrup (produces 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g granulated sugar
For the Premix (makes 850ml, enough for 10)
400ml decent vodka
100ml dry gin
150ml peach-flavored liqueur
200ml citrus syrup (from the recipe above)
A few cranberries, to garnish
Mandarin essential oil, for finishing
Method
Making the Cordial: Combine all the items into a saucepan, heat until it reaches a gentle boil, mixing until the sugar dissolves. After that, take off the burner and leave to cool down entirely. Decant into an sterilised bottle, seal and store in the refrigerator, where it will keep for up to one month.
For the Premix: Combine the specified spirits and syrup into one large bottle, leave to sit for 60 minutes, then filter it preferably using cheesecloth, to ensure it's perfectly clear.
To serve: Measure 85ml from the cocktail base to a stirring glass filled with ice, and stir lightly for about 60 seconds until cold. Strain to a frosted cocktail glass or a similar vessel, decorate with the cranberries adding the final touch using a light spray of mandarin oil over the drink.
